- 4 boiled eggs
- 1 medium boiled potato cut into big pieces (optional)

- 2 tsp ginger garlic paste
- 1 1/2 tbsp thick curd
- 1 tbsp cream
- 2 tbsp barista (fried onions)
- 1 tsp coriander powder
- 1/2 tsp garam masala powder

- 2 tsp sugar
- 1 cup cold milk
- 2 slited green chillies
- as needed Ghee
- handful Fried raisins and cashews
- 1 bay leaf
- 2 cinnamon sticks
- 2 green cardomom
- 1-2 dried red chilli
- 1 tsp shahi jeera / cumin seeds
- 1-2 drops kewra essence
- 1-2 drops rose essence
- 1/4 tsp Pepper powder (optional)
- 2 tsp chopped coriander leaves for garnishing
Steps to make to make Shahi Dim er Korma or Egg Korma
- Make slits with the help of a knife over the eggs. Now heat a pan add 2 tsp of ghee & shallow-fry the boiled eggs and potatoes by sprinkling some salt. Now keep it aside.
- Soak the melon seeds and cashews in water for half an hour then in a grinding jar add this soaked cashews and melon seeds and curd and grind it into a smooth paste. Keep this paste aside.
- Now in the same pan, add 2 tbsp of ghee. Add all the khada masalas, shahi jeera, bay leaf, dried red chillies, green cardomom, cinammon sticks. Let them splutter then add grated onion & green chillies to it. Fry it for about a minute then add ginger-garlic paste to it. Keep the flame low and fry the masalas well for 2 to 3 mins more.
- Then add dry masalas like coriander powder, garam masala powder, salt, 1 tsp sugar and give it mix. Fry for 1 more min. Then add cashew paste to it. Mix everything well and fry the masalas until oil starts releasing. Keep the flame low.
- Once the masalas is fried, add cold milk to it. Give it a mix. Now cover it and cook it for about 2 mins. Then add fried eggs & potatoes to it. Adjust salt and sugar at this point of time. Give everything a good mix and once again cover it and cook it for 7 mins on a low flame.
- After 7 mins open the lid and add some cream to it. Add 1 tbsp of barista, fried cashews and raisins, sprinkle some pepper powder and give it a good mix. Cook for about 2 mins more. Now switch off the flame. Your Shahi Egg Korma is now ready to serve. Sprinkle some barista and chopped coriander over it.
