  2. 1 medium boiled potato cut into big pieces (optional)
  3. 1 medium onion (grated)
  4. 8-10 cashews
  5. 1 tbsp melon seeds
  6. 2 tsp ginger garlic paste
  7. 1 1/2 tbsp thick curd
  8. 1 tbsp cream
  9. 2 tbsp barista (fried onions)
  10. 1 tsp coriander powder
  11. 1/2 tsp garam masala powder
  12. to taste Salt
  13. 2 tsp sugar
  14. 1 cup cold milk
  15. 2 slited green chillies
  16. as needed Ghee
  17. handful Fried raisins and cashews
  18. 1 bay leaf
  19. 2 cinnamon sticks
  20. 2 green cardomom
  21. 1-2 dried red chilli
  22. 1 tsp shahi jeera / cumin seeds
  23. 1-2 drops kewra essence
  24. 1-2 drops rose essence
  25. 1/4 tsp Pepper powder (optional)
  26. 2 tsp chopped coriander leaves for garnishing

Steps to make to make Shahi Dim er Korma or Egg Korma

  1. Make slits with the help of a knife over the eggs. Now heat a pan add 2 tsp of ghee & shallow-fry the boiled eggs and potatoes by sprinkling some salt. Now keep it aside.
  2. Soak the melon seeds and cashews in water for half an hour then in a grinding jar add this soaked cashews and melon seeds and curd and grind it into a smooth paste. Keep this paste aside.
  3. Now in the same pan, add 2 tbsp of ghee. Add all the khada masalas, shahi jeera, bay leaf, dried red chillies, green cardomom, cinammon sticks. Let them splutter then add grated onion & green chillies to it. Fry it for about a minute then add ginger-garlic paste to it. Keep the flame low and fry the masalas well for 2 to 3 mins more.
  4. Then add dry masalas like coriander powder, garam masala powder, salt, 1 tsp sugar and give it mix. Fry for 1 more min. Then add cashew paste to it. Mix everything well and fry the masalas until oil starts releasing. Keep the flame low.
  5. Once the masalas is fried, add cold milk to it. Give it a mix. Now cover it and cook it for about 2 mins. Then add fried eggs & potatoes to it. Adjust salt and sugar at this point of time. Give everything a good mix and once again cover it and cook it for 7 mins on a low flame.
  6. After 7 mins open the lid and add some cream to it. Add 1 tbsp of barista, fried cashews and raisins, sprinkle some pepper powder and give it a good mix. Cook for about 2 mins more. Now switch off the flame. Your Shahi Egg Korma is now ready to serve. Sprinkle some barista and chopped coriander over it.
