Today I am sharing one of my favourite Daal recipe. The dishes from roadside dhabas are always very delicious and aromatic.This simple daal recipe is so simple to make . Just you have to know the technique to cook it.It's so delicious that you will love to have it with any kind of roti or paratha.

Ingredients and spices that need to be Prepare to make Dhaba style smoky Toor Dal Tadka:

  1. 1 cup Toor Daal
  2. 1/4 cup Moong Daal
  3. 1 medium size Tomato
  4. 1 medium size Onion
  5. 4-5 Garlic cloves
  6. 1 inch size Ginger
  7. 1 Black Cardamom
  8. 1-2 Bay leaves
  9. 1 teaspoon Cumin seeds
  10. 1 teaspoon Turmeric powder
  11. 1 teaspoon Kashmiri red Chilli powder
  12. 2 tablespoon Cooking oil
  13. to taste Salt
  14. 1 handful chopped Coriander leaves
  15. 3-4 green Chillies
  16. For Tadka
  17. 2 tablespoon Ghee
  18. 2-3 dry red Chillies
  19. 1/4 teaspoon Hing/Asafetida
  20. 1/2 teaspoon red Chilli powder

Steps to make to make Dhaba style smoky Toor Dal Tadka

  1. Wash 1 cup of toor daal and 1/4th cup of moong daal nicely and soak with water for an hour.
  2. After soaking, place daal with 1 litre of water, 1/2 teaspoon of turmeric powder,1 black cardamom and 1-2 bay leaves.
  3. Pressure cook the daal for 2 whistles. Set aside.
  4. Chop onion, tomato, garlic and ginger.
  5. Heat 2 tablespoon of oil. Temper 1 teaspoon Cumin seeds.
  6. When cumin seeds splatter, add in chopped garlic.
  7. Cook for few seconds and then add in chopped onions.
  8. Cook until onion becomes soft.
  9. Next add in chopped tomato and cook for 2-3 minutes.
  10. Add in dry spices like 1/2 teaspoon of turmeric powder, 1 teaspoon of Kashmiri red chilli powder and little salt.
  11. Stir well to mix. Add in 2-3 tablespoon of water.
  12. Mix well, cover and cook in medium low heat for 5 minutes.
  13. When tomato cooks well, remove the lid and fry the spice mixture to very high heat. Flame should touch the mixture. That's why I used small pan to cook.
  14. Continue to cook in high flame for about 5 minutes by tilting the pan towards flame. Smoke should come out from the pan. But don't burn the mixrure.
  15. Immediately transfer the mixture to cooked daal.
  16. Mix well, adjust the consistency. If required add in 1/2 cup of hot water. It's not necessary to cook again in this stage.
  17. For tadka heat 2 tablespoon of ghee to a pan.
  18. Add in dry red chillies, hing or asafetida and 1/2 teaspoon of.red chilli powder.
  19. Immediately pour to the prepared daal.
  20. At last add in chopped coriander leaves and some green chillies.
  21. Give a last stir and smoky daal tadka is ready.
  22. Goes well with roti, chapati, naan or paratha.
