- 1/4 cup - Chana daal
- For Leafy veggies-
- 1 bundle - Sarson/Mustard leaves
- 1/2 bundle - methi
- 1/2 bundle - Palak
- 1/2 bundle bathua
- For Sauting-
- 5-6 spoons Desi Ghee
- 1/2 tsp Jeera
- 1/4 tsp Hing
- 3 tablespoons dhania powder
- 1/2 tsp - red Chilli powder
- 1/4 tsp - Garam masala
- 2-3 onions
- 1 small tomato
- 5-6 green chillies
- 6 pods garlic
- 1 inch grated Ginger
- as needed Salt
- For tadka-
- 2 tbsp - ghee
- 2-3 sabut Lal Mirchi
- 1/2 tsp - jeera
- 1/4 tsp - Lal Mirchi powder
- 3-4 pods chopped garlic
- 2-3 tbsp flour
- For Makai ki roti-
- 2 cups - Maize flour/Corn meal (Makkai ka aata)
- 1/2 tsp - grated Ginger
- As needed Salt
- 1/2 cup - Warm water
- 1/2 tsp - Ajwain
Steps to make to make Makai ki roti & Sarson Ka Saag
- First take all these leafy veggies mentioned above. Clean them twice with water and chop them evenly.
- Now take 1/4 cup of Chana daal and wash and soak them for about 1/2 hour
- Now take a vessel to that add all of the chopped leafy veggies along with soaked daal and boil it for 15 mins
- Now after 15 mins switch of the flame and let them cool for a while and then grind it roughly in a mixer grinder. Puree is ready.
- Now for saute add ghee in the pan.Let that heat up. To that add jeera, hing, garlic, ginger, onion, tomatoes and all masala.
- Now roast the flour until raw smell goes away. I am using combination of Maize flour and wheat flour you can also use only either of these two
- Add the roasted flour to ghee mixture and mix that well. Now mix all of the puree of leafy veggies and mix that well let that cook for 20mins on a low medium flame.
- Now for tadka in a small kadchi take ghee. Let that heat up and add sabut Lal Mirchi, red Chilli powder, garlic and jeera. When the saag is ready you can heat that up again and add it.
- Now for the dough add the Maize flour in a bowl. To that mix ginger, salt and ajwain.
- Now take the warm water and knead the dough. It would be little difficult to knead this Dough because it absorbs the water. So keep on adding water if required more.
- Now make it dough. Roast the roti on Tawa. Apply some desi ghee and butter on roti.
- Winter special - Makai ki roti and Sarson Ka saag is ready. Serve them hot right away with some Gud, matha and thecha.
