- 1 inch "cinnamon stick
- 4 dry red chilli

- Firstly dry roast the whole spices listed in masala section. Then grind it to the powder and the instant masala for curry is ready. Keep it aside.
- Now clean and chop the mushrooms, onions,tomatoes,green chilli, garlic.Also peel and cut the eggs as shown in the picture.
- Heat oil in heavy bottomed pan, add chopped garlic and green chillies followed by onions. Once the onions become light brown,add tomatoes and grated ginger to it and cook until tomatoes become soft.
- Now add mushrooms and prepared masala and mix well then add turmeric powder,red chilli powder and salt. Saute and cook for 5minutes.
- Add eggs and saute it in mushroom masala mixture. Try to mix very gently. Simmer the flame and let eggs absorb the masala then add water to it.Cover for 5minutes on low flame. The gravy is cooked and ready add chopped coriander leaves.
